A couple of weeks ago, I walked into my kitchen ready for breakfast and craving something "fall-ish". We didn't have a whole lot in the cabinets to eat, and we were trying to stick to a budget, so I plundered through my cabinets and browsed Pinterest until I found this recipe from Gimme Some Oven for 3-Ingredient Biscuits. As good as the recipe sounded though, I didn't want just plain biscuits. Like I said, I was craving Fall, so that just wasn't going to cut it. You get it, right? Fall things are very important, ya know! 😋
Plus, I don't ever have coconut milk- we use whole cow's milk. So, I decided to make my own, delicious recipe, inspired by my Pinterest finds. Keep reading to see the recipe.
I had some apples, so I decided to peel and dice up a large apple, mixing it together with the already-combined biscuits ingredients. I then added brown-sugar and cinnamon to the mixture before mixing it one last time and then putting balls of dough onto a cookie sheet.
I covered mine with a silicone baking mat, but you can also just spray it down with a bit of cooking spray. I recommend making the dough into balls that are just a little bit bigger than golf balls.
These biscuits are delicious. They are only a little bit sweet, which is a nice change from a lot of breakfast choices out there.
Easy Apple Cinnamon Biscuits
Ingredients
- 1/4 cup coconut oil
- 3/4 cup milk (You may need to add another splash if it seems too thick after adding the apples)
- 2 cups self-rising flour
- 1 Large Apple, Peeled and Diced (I used an Ambrosia apple)
- Cinnamon, To Taste (I used 1/2 Tbs.)
- 1/2 cup brown sugar
